I try to have at least one night of the week where we do not consume any meat. Usually that means Indian food, because with the lack of meat comes an abundance of flavor. This here is a vegetarian Vindaloo, containing yams, green peas, chick peas, carrots, and two kinds of chili peppers (green from a friend’s garden and red from mine). Vindaloo is normally very spicy, but I made sure to go a step higher. Served over basmati rice and with a side of garlic naan (not pictured).
