A Warm-Weather Appetizer

For those hot nights when you want to have a friend over to hang out on the patio, a no-cook, simple snack is the way to go. Here we have fresh mozzarella drizzled with extra virgin olive oil (I can’t stand Rachael Ray so I have to spell it out fully) and garnished with olives and marinated roasted red peppers in oil (this adds a lot of flavor and makes all the difference from the plain version). Most people will sprinkle with fresh basil, but I used parsley from our garden instead.
