
Behold this offering of orecchiette with sausage and broccoli rabe. The Italian classic usually calls for sweet sausage, but I decided to use a mixed pack of hot and sweet from Livoti’s in Middletown, which they make themselves. How hot could it be? As someone who loves spicy food and is used to “Premio”-level hot from the supermarket which is barely mild to me, I was blown away. This sausage was hot. And while the flavor of the dish was awesome, I was not thrilled with having to sweat my way through a pasta dinner. I learned my lesson. Next time, sweet it is.
