One of my favorite (and easy) weeknight dinners to prepare. Take thinly sliced chicken breast and roll it around asparagus and a chunk of cheese (you can use any kind, but I prefer a sharp cheddar which really breaks through). Sprinkle a hefty amount of breadcrumbs and olive oil on top and bake at 350 for 30 minutes. Serve over a bed of mashed potatoes or creamy polenta.
