One of my favorite dishes at Kunya Siam in Atlantic Highlands is something called Rama Peanut. However, unlike most Thai dishes, there are hardly any recipes online. However, the one I did find and follow was nearly identical, making this perhaps the closest I have ever come to replicating a meal I’ve had in an Asian restaurant. The sauce is a mixture of coconut milk, peanut butter, fish sauce, red curry paste, fresh ground ginger, and brown sugar. It was outstanding! The only changes made to the recipe were the addition of pepper flakes for some heat and using steamed broccoli instead of spinach. Give it a try…it was incredibly easy to pull off.
