A delicious Chicken Sorrentino from Esposito’s in Matawan (another dish from there was featured yesterday). Sauteed chicken breasts were topped with thinly sliced breaded eggplant, prosciutto, fresh mozzarella, and a brown sauce. What’s not to like?
