Last week, I made paella for the first time. From start of prep to finish, it took about four hours. While I thought this first-try was decent, my swapping out of mussels/clams for extra shrimp may have harmed the dish more than it catered to our tastes. It just missed that fishy zing that paella usually has. Next time, I will go a more traditional route…if there is a next time.
