The ingredients, as told to me by the owner of Los Corrales herself, are simple enough, but the complexity that follows sends you into a euphoria—an adrenaline rush brought on by the spice. I find it difficult to order anything else when at this restaurant. It has forever altered how I view food. Mexican cuisine itself will never be the same.
