A quick and easy vegetarian meal consisting of a grilled Kontos* flatbread topped with hummus and sautéed spinach. Served with a side of oven-fries and a splash or two of hot sauce. Delicious…and dare I say, healthy?
*Look for Kontos “Mediterranean Lifestyle” flat bread. They purport it has some of the benefits of Greek yogurt. I don’t know about that, but the carbs are low and the protein high, topping out at nearly 20 grams for one slice of bread. Oh, and it tastes great too.
