A brunch I whipped up last month on a Saturday morning. The star is “Eggs in the Hole”, which is a piece of toast with a circle cut out of the middle, grilled, and filled with an egg which is cooked until it is still runny. Trying to flip it over without the egg falling out or breaking is the fun part. Top with Hollandaise sauce. On the side is veggie sausage, home-fries, and tomatoes fried in extra virgin olive oil. The meal itself was a simple one; coordinating the different sides and cleaning up when done was the chore!
