This was a real treat. I love scallops (possibly my favorite seafood). I hardly ever order them and never make them at home because of how expensive they are. Sure enough, William brought over these babies one night and my mom and I cooked them up. What I have learned when it comes to working with such a great product, if you have perfection, leave it alone. We seasoned them lightly with salt and pepper, and then seared them in butter in a century-old cast iron skillet. It doesn’t get much better.
